Sundae
순대
- Main ingredients
- Pork casing, blood and glass noodles; sticky rice, vegetables and meat vary by style
- Flavor and character
- Sundae is a cooked sausage filled with blood, glass noodles and other ingredients. Noodle-heavy snack-shop versions differ from regional sausages with more vegetables and meat. The dark filling commonly gets its color from blood, not beans or chocolate.
- How to eat it
- To omit liver and lung, ask for “sundae only, no extra offal.” The sausage itself may still contain blood and a pork casing.
