Grilled hairtail

갈치구이

What exactly is it?

Salted sections of long, flat hairtail are grilled until the skin browns and the white flesh flakes softly. Rice balances the salty surface. Unlike galchi-jorim, the chili-seasoned braise, this is a grilled fish dish without a simmering sauce.

Main ingredients

Hairtail, salt; cooking oil for pan-grilling

Ordering and serving

It usually arrives cooked. Lift off small flakes: fine bones run along both edges as well as the central backbone. A whole-fish order is different from a set meal with one portion, so ask how many people it serves and whether rice is included.

The name and its food history

The Korean name refers to the fish’s blade-like shape; its older names appear in the Joseon-era fish record Jasaneobo. Jeju restaurants also serve long, whole grilled hairtail for sharing. That regional presentation does not establish Jeju as the birthplace of all grilled hairtail.

Grilled fish

생선구이

Main ingredients
Fish such as mackerel, hairtail, croaker or hokke (Okhotsk Atka mackerel), salt, rice and side dishes
Flavor and character
Cleaned fish is seasoned and cooked in a pan, on a grate or in an oven. Restaurants commonly grill it in the kitchen and serve it on a plate with rice; diners separate the flesh from the bones. Pork-barbecue condiments are not essential to the meal.
How to eat it
Service varies. KOMSA’s report on 88 Saengseon Gui in Sokcho describes staff grilling fish over charcoal at the table and transferring it to plates. Tabletop grilling does not automatically mean self-service: ask who handles the grill. For a mixed set, check the minimum portions and whether rice is included.
