Grilled croaker

조기구이

What exactly is it?

Salted croaker is grilled as a rice accompaniment, often as a small whole fish. Its white flesh is soft, but the bones remain. Grilled fresh croaker and grilled gulbi, the salted-and-dried version, differ in firmness and saltiness.

Main ingredients

Cleaned yellow croaker, salt, cooking oil

Ordering and serving

A small fish may appear among a set meal’s side dishes or as its main course, normally cooked in the kitchen. An extra plate helps with the bones. Gulbi-gui and bori-gulbi on a menu indicate dried-fish preparations, not simply alternative names for fresh grilled croaker.

Croaker and the history of gulbi

Croaker’s food history includes west-coast fisheries and salt-drying for preservation. Sejong Sillok Jiriji records fishing around Yeonggwang and Yeonpyeong; Jeungbo Sallim Gyeongje describes salting and drying the whole fish. Gulbi is a processed form of croaker, so a menu saying jogi-gui does not necessarily mean Yeonggwang gulbi.

Grilled fish

생선구이

Main ingredients
Fish such as mackerel, hairtail, croaker or hokke (Okhotsk Atka mackerel), salt, rice and side dishes
Flavor and character
Cleaned fish is seasoned and cooked in a pan, on a grate or in an oven. Restaurants commonly grill it in the kitchen and serve it on a plate with rice; diners separate the flesh from the bones. Pork-barbecue condiments are not essential to the meal.
How to eat it
Service varies. KOMSA’s report on 88 Saengseon Gui in Sokcho describes staff grilling fish over charcoal at the table and transferring it to plates. Tabletop grilling does not automatically mean self-service: ask who handles the grill. For a mixed set, check the minimum portions and whether rice is included.
