Korean-style serving of Hamheung naengmyeon

함흥냉면 · Hamheung naengmyeon

Hamheung naengmyeon

함흥냉면

What exactly is it?

Fine, elastic starch noodles define this style. A prominent version adds spicy seasoned fish, but restaurants may also offer broth-based and ordinary dressed bowls. A Hamheung sign does not mean every dish contains raw fish.

Main ingredients

Potato or sweet-potato starch noodles, chili dressing, radish, cucumber, seasoned fish or meat

Ordering and serving

Fish toppings vary by restaurant and may include flatfish or pollock. Chili marination is not cooking; choose a meat-topped option if avoiding raw fish. Cutting the springy noodles is perfectly practical.

Origins and changes

Noodles made with potato starch and seasoned fish in the Hamheung region traveled south with refugees after the war. As they became known as Hamheung naengmyeon, starch blends and the fish used for toppings changed.

Naengmyeon

냉면

Main ingredients
Buckwheat or starch noodles, cold broth or chili dressing, radish, cucumber, meat and egg
Flavor and character
Naengmyeon covers both cold noodle soups and dressed noodles. Buckwheat-rich strands can be tender and aromatic; starch-heavy ones are much springier. The name alone does not tell you whether the bowl is spicy or how chewy its noodles will be.
How to eat it
Choose mul for broth or bibim for dressed noodles. Scissors help shorten long strands. Taste the broth before adding the mustard and vinegar supplied alongside.
