Young-radish kimchi
총각김치
- Main ingredients
- Small chonggak radishes with leaves, salt, chili powder, garlic, fermented seafood
- Flavor and character
- Small radishes are pickled with their leafy tops attached. Firm roots and softer stems are eaten together; larger roots may be split. This differs from kkakdugi’s cubes of radish root alone.
- How to eat it
- Cut long stems into manageable lengths with the root. Fully fermented radishes taste tangy; younger kimchi can retain raw radish pungency.
